Our Ice Cream Process

We are Arizona's first ice cream pasteurizers. Although there is a science to our process, we keep it simple by using whole and natural ingredients mixed with milk and cream from grass fed cows. We believe that ice cream shouldn't contain ingredients that you can't pronounce. We use a 5 step process to create a one-of-a-kind ice cream.

Step 1
First, we mix our whole milk, Cream, sugar and eggs with whatever natural flavor is desired and heat it in the Pasteurizer to 155° F for 30 minutes. Then, the Subfreezing water from the 100-Gallon Chiller quickly surrounds and insulates the mixture to bring it down to 50° F in just a short period of time. This is the pasteurizing process.

Step 2
We let the ice cream base age in the refrigerator for 24 hours so the natural flavors will settle in nicely.

Step 3
The ice cream base is churned in the Batch Freezer. This is where the liquid base turns into ice cream in just 10 minutes. That's a lot of spinning! Fun Fact: Did you know that air mixes into ice cream when it is churned? This industry "secret ingredient" is what makes ice cream so creamy!

Step 4
We then put our freshly churned ice cream into 3-gallon containers and immediately place them in the Hardening Cabinet, which drops the temperature of the ice cream to approximately -30° F for 24 hours. This step is important because it prevents ice crystals from forming in the ice cream to ensure the creamiest texture possible.

Step 5
The all-natural flavor infused ice cream is then placed in the Dipping Cabinet for you to enjoy!
